Love in the Kitchen

Hi, I'm Lisa Cifelli, the owner and chef of Dinner In A Snap LLC. I'm a graduate of the United States Personal Chef Institute and a Premiere Member of the United States Personal Chef Association and ServSafe® certified. I am also a member and Vice President of the South Jersey Chapter of Personal Chefs.

I enjoy working with children in the kitchen because it allows them to have a hands on experience that will foster a love for cooking and an opportunity to create and taste a variety of foods. I have found that children who have input into menu selections and meal creations are more willing to try new foods.

The services I provide are a result of my commitment to my clients. When I walk into your home, you can feel comfortable knowing I will prepare delicious food that will be made with love.

Please remember that 10% of all sales directly support children’s charities.

RECIPE OF THE MONTH

Each month you will find one of Lisa’s family tested and child approved tasty recipes which will make meal times memorable and snack times fun and nutritious.

Healthy Baked Chicken Fingers

Ingredients:
1 cup old fashioned oatmeal
1/3 c ground flaxseed
½ c grated Asiago cheese
1 T fresh Thyme, Chopped
3 T olive oil
1 large egg white
1 pound chicken tenderloins

Directions:
In food processor, blend oatmeal, ground flax seeds, Asiago cheese and fresh herbs until the oats are well chopped.  Drizzle in 2 T of oil, process again until oil is well-distributed and crumbs appear damp.  Put crumbs into a shallow dish.  In a bowl, lightly beat egg white with the remaining oil.

Dip chicken tenders into the egg mixture and let the excess drip off. Then place into the crumb mixture, patting to make sure crumbs stick.

Place tenders on rack coated with cooking spray and place rack over a foil lined baking sheet.  Put into the fridge while you heat the oven to 475.  When the oven is hot, place tenders into the oven and bake for 16 minutes.  Remove and let rest about 5 minutes.  Gently remove chicken tenders from rack with spatula.

Enjoy!
